Amazing Roasted Veggies
A great way to enjoy vegetables for those who so not like vegetables.

Ingredients
- 4 roma tomatoes cut in half
- 2 large zucchini squash cut into 1 inch slices
- 2 yellow crook neck squash cut into 1 inch slices
- 1 medium yellow bell pepper cored, seeded and sliced into 1 inch strips
- 1 medium orange bell pepper cored, seeded and sliced into 1 inch strips
- 1 medium green bell pepper cored, seeded and sliced into 1 inch strips
- 1 medium red bell pepper cored, seeded and sliced into 1 inch strips
- 3 cloves of garlic minced
- 1 large Vidal onion sliced into 1 inch slices
- 1/2 cup olive oil
- salt & pepper to taste

Preparation
Step 1
Pre heat oven to 425 degrees
Step 2
Line a baking sheet with foil for easy cleanup
Step 3
place vegetables on baking sheet and coat with olive oil
Step 4
place in oven and roast for 30 minutes.
Step 5
Remove from oven and season with salt and pepper and serve.
Watch oven they very on temps and you can over cook vegetables.
I enjoy a little char on my vegetables as it gives them that outdoors cooked flavor. Serving suggestion grate fresh Parmesan cheese over hot vegetables for an amazing taste.
