This has amazing flavor and is simple to make. I have substituted canned seafood for those of us who can't afford fresh seafood. The smoked oysters also add to the flavor.

Ingredients

  • 1/4 olive oil
  • 1/4 cup flour
  • 2 cups yellow onions chopped
  • 1 cup green pepper chopped
  • 1 cup celery chopped
  • 1 tablespoon salt
  • 1 teaspoon cayenne
  • 5 bay leaves
  • 8 cups shrimp stock ( chicken stock or fish stock)
  • 1 pkg frozen shrimp
  • 3-4 cans crab meat
  • 3-4 cans oysters (pour in the juice)
  • 1-2 cans smoked oysters ( use the oil)
  • 2 tablespoons green onion chopped
  • 1 bunch fresh parsley
  • 2 cups cooked rice (may include or omit)

Preparation

Step 1

Combine the flour and oil to make a dark brown roux. Add the onions, peppers, celery, salt, cayenne, bay leaves. Cook until soft. Add the stock

Step 2

Throw in all the canned seafood, parsley and green onions. Simmer for 15 minutes. Add the shrimp last and turn it off as soon as the shrimp turn pink. Over cooking the shrimp will make it tough. Add the rice if you want to make it thicker or add more cans of seafood.

You can make this to suit your tastes, adding your favorite seafood. The oysters are what really bring out the flavor. I've used chicken stock before when I couldn't find fish stock.
