Ingredients
- 1 1/2 cup flour
- 1/2 teaspoon salt
- 3 teaspoons baking powder
- 3 tablespoons sugar (add a little more or less depending on your taste)
- 3 tablespoons canola oil (more oil the fluffier the pancake)
- 1 egg
- 1 cup milk
- 1/2 teaspoon of vanilla (optional)
- chopped fruit and nuts (optional)
Preparation
Step 1
It is best to use an electric frying pan for pancakes but a regular stove top frying pan will also work at medium heat.
Heat electric frying pan at 350
Step 2
Put all dry ingredients into a bowl and mix
Add oil egg and milk (adding more if needed until somewhat runny) and vanilla (if desired)
Step 3
Beat mixture until all lumps are gone and it's nice and smooth
Add fruit and nuts if desired and give it a stir
Step 4
Pour batter onto frying pan with a ladle
Flip pancakes when they start to look a bit dry and bubble on top
Flip again after about two minutes
Cook until both sides are golden brown
Serve with maple syrup (best served slightly warm. Warm syrup by placing the bottle in a pot of hot water for a few minutes). Also good served buttered with a squeeze of fresh lemon and a sprinkle of sugar!
