Christmas Treat: Rum Balls

It isn't Christmas without these! Try to change it up by using Boubon or a Liqueur in place of the rum!

Ingredients
- 1 cup Semi- Sweet Chocolate Chips
- 1/2 cup White Sugar
- 3 tbsp Corn Syrup
- 1/2 cup Rum (or Bourbon/Liqueur)
- 2-1/2 cups Crushed Vanilla Wafers
- 1 cup Chopped Walnuts (optional)
- 1/3 cup Confectioner's Sugar
- Sprinkles
- You will need: Double broiler - a pot with 3" of water in it, with another smaller pot or heat-safe bowl that fits completely on top of it. The steam will melt the chocolate without the threat of burning the chocolate.

Step 1
Place double boiler on medium heat, and put the chocolate chips in the top pot/bowl. Remove from heat.
Step 2
Stir until melted and smooth. Stir in sugar and syrup. Blend in rum (or liqueur). Add the wafers and nuts. Mix until totally distributed. Cover and refrigerate until firm.
Step 3
Roll the chilled chocolate mixture into bite sized balls. Roll the balls in a mixture of ground nuts and confectioner's sugar, just plain confectioner's sugar, or sprinkles.
Step 4
Store in a covered container for a week before serving to blend the flavours.
