Ingredients
- 2 steaks of your choice (Filet Mignon is best)
- 1 tablespoon pepper
- 1/2 tablespoon olive oil
- 1/ tablespoon butter
- salt to taste
- 3 tablespoons cognac
- 3/4 cup beef broth
- 3/4 tablespoon tomato paste
- 1/2 tablespoon cornstarch
- 1/4 cup beef broth
- 1 tablespoon butter
Preparation
Step 1
Cook steaks to your liking with salt and pepper
Remove from heat and store under tin foil and allow to rest
Step 2
Pour off excess fat from pan and add cognac bringing to boil and quickly reduce to medium heat
Add 3/4 cup of beef broth and tomato paste reducing heat to simmer for a few minutes
Combine corn starch and remaining 1/4 cup beef broth Increase heat to medium/high bringing back to a boil to thicken while stirring
Whisk in butter and season to taste with salt and pepper
Step 3
Pour over steak and serve
Best served with garlic mashed potatoes and a side of asparagus. Don't forget the red wine!
