Ingredients
- 1 cup rice
- 2 Tablespoons vegetable shortening
- 1 medium onion, chopped
- 1/2 green bell pepper, diced
- 1/2 teaspoon salt
- 1 teaspoon chili powder
- 1 10 oz. can of diced tomatoes
- 2 cups of water
Preparation
Step 1
In large skillet, brown rice in shortening. Add onion and pepper and cook until vegetables are tender.
Step 2
Add salt, chili powder, diced tomatoes, and water to skillet.
Step 3
Cover and let simmer for 25 to 30 minutes over medium heat, stirring every now and then.
Adjust the amount of chili powder to taste.
