- 2 Tablespoons of Extra Virgin Olive Oil
- 3 Medium Yukon Golds Peeled and Diced
- 2 Medium Onions Chopped
- 2 Bay Leaves Fresh or Dried
- 1 Pound of Kale Coarsley Chopped
- 1 Can of Diced Tomatoes
- 1 Pound of Sliced Linguica
- 1 Quart of Chicken Broth
- Coarse Salt and Pepper

Preparation
Step 1
Heat oil in a deep pot over Medium-High heat.
Step 2
Add Potatoes and Onions, cover and cook for 5 minutes, stirring occasionally.
Step 3
Add Garlic, Bay Leaves, and Kale to the pot, cover and wilt greens for 2 minutes, season with salt and pepper.
Step 4
Add Tomatoes, Linguica, and Chicken broth to the pot and bring to full boil.
Step 5
Reduce heat back to Medium and cook 5 to 10 minutes until potatoes are tender.
You can add any other ingredients that you might like, my mother use to make it this way
