Spicy shrimp and mango stir fry 1 Picture

Ingredients

  • 2 teaspoons of curry powder
  • 1/2 teaspoon of ground ginger
  • 1/4 teasponn of cayenne pepper
  • Salt and Pepper
  • 1 pound of uncooked peeled shrimp deveined large shrimp
  • 1 tablespoon of oil
  • 1/2 red pepper seeded and cut into thin strips
  • 1 cup of snow peas trimmed and halved crosswise
  • 1 firm but ripe mango peeled pitted and cut into 1/2 inch dice
  • 1 bunch of scallions thinly sliced white and light green pieces seperated from the dark green pieces
  • 2 tablespoons of chopped fresh basil
  • 1 tablespoon of fresh cilantro
  • 1 tablespoon of chopped fresh mint
  • 1 tablespoon of lime juice

Preparation

Step 1

In large bowl combine curry, ginger, cayenne, and 1/4 tsp. of salt. Add shrimp, toss to coat, cover and chill for 30 minutes

Step 2

In large pan warm oil over med-high heat. Add shrimp, bell pepper, and snow peas, stir fry for 2 minutes. Stir in mango and white and light green scallions, stir fry until shrimp are opaque and cooked through 2 to 3 minutes. Sprinkle in basil, cilantro, mint, and dark scallions and stir untill warmed.

Step 3

Remove skillet from the stove and juice with lime, season with salt and pepper and serve

Serve over white rice
