White Currant Jam

There are two variations to use for making this. In the first one you add the sugar after cooking the berries.This is the one you want to use to seal in jars. The second one is done by adding everything together first, then putting through a strainer.
If you don't have any currants, you might think about planting a bush or two. They are easy to grow and grow even in cold climates. They usually produce by the second year. They are sometimes hard to find in the grocery store.

- 1 c. currants rinsed and taken from stems
- 1 c. sugar
- 1 1/2 c. water

Preparation
Step 1
Cook the berries gently by steaming in the water until soft and pressing gently on them with a potato masher. This should take about 10 minutesl
Step 2
Remove from heat and and put into a strainer over a bowl. Use a utensil to press out the juice into the bowl.
Step 3
Place the berries into a pan and cook for one minute. Add the sugar, bring to a good boil. Simmer 3 minutes, ladle quickly into jars and seal.
Step 4
The other recipe calls for bringing the currants, the water and the sugar to a boil over medium heat. Simmer until the berries collapse and the mixture is very slightly syrupy. Remove from heat. Put all into a large strainer over a bowl. Press with a utensil to make the juice run into the bowl. This will separate the seeds and peels. Discard what's left in the strainer. This mixture will set almost immediately while warm. Put into a container and place in the refrigerator.
