This easy to prepare Peruvian-style chicken dish is an amazing change of pace from the traditional roasted chicken. The combination of onions, peppers and spices flavor melding while cooking will have your mouth watering as you wait!

Ingredients

  • 3 Teaspoons Olive Oil
  • 3 Tablespoons Paprika
  • 1½ Tablespoon Cumin, ground
  • 2 Teaspoons Sea Salt
  • 1½ Teaspoons Black Pepper, ground
  • 6 Cloves Garlic, minced
  • 3 Tablespoons White Wine Vinegar
  • 1 Large Sweet Onion, peeled and thickly sliced
  • 1 Whole Carved Chicken or 6 Individual Chicken Legs
  • 2 Red or Yellow Bell Peppers, cored, seeded and cut into chunks
  • 1 Lemon, sliced

Preparation

Step 1

Preheat oven to 425°F. In a small bowl, combine paprika, cumin, salt, pepper, garlic, vinegar and oil to make a paste.

Step 2

Place chopped onions in a mixing bowl and toss with 2 Tablespoons of the spice mix. Rub the rest of the spice mix on the chicken and place in a medium sized baking pan or glass.

Step 3

Mix the chopped peppers, lemon and onions and cover the chicken in the pan. Roast for 45 minutes or until chicken is cooked through and vegetables are tender. Let sit 5 minutes before serving.
