Apple Strawberry Cobbler

Rather than the sugar-laden, white flour pies and desserts,
here is a sugar and grain free alternative.
Ingredients
- 2 granny smith apples, chopped
- handful frozen strawberries (approximately 8 )
- ½ teaspoon cinnamon
- 1 tablespoon xylitol (or more to taste)
- 1 – 1½ cups Almond Power Bar Crumbles (see ingredients below)
- 8 pats butter

Preparation
Step 1
Put chopped apples and strawberries in a pie dish, sprinkle with cinnamon and xylitol and mix. Top
with crumbles and pats of butter.
Step 2
Bake in a 350 degree oven for about 30 minutes or until apples are tender and cobbler is bubbly.
Step 3
Almond Power Bars (for crumbles):
2 cups raw almonds
½ cup flaxseed meal
½ cup unsweetened shredded coconut
2 scoops flavored whey protein powder
½ cup raw almond butter
½ teaspoon kosher salt
½ cup coconut oil
8 drops liquid stevia or ¾ teaspoon stevia powder
1 tablespoon pure vanilla extract
Step 4
Place almonds, flax meal, shredded coconut, whey powder, almond butter and salt in a food processor. Pulse briefly, about 10 seconds
Step 5
In a small sauce pan, melt coconut oil over very low heat.
Step 6
Remove coconut oil from stove; stir stevia and vanilla into oil.
Step 7
Add coconut oil mixture to food processor and pulse until ingredients form a coarse paste.
Step 8
Press mixture into an 8X8 glass baking dish.
Step 9
Chill in refrigerator for 1 hour, until mixture hardens.
Step 10
Crumble over cobbler.
