Ingredients

  • For 1 chicken or 1 kg mutton meat aknee you will need:
  • 1 large onion finely chopped,
  • 1 cup oil and 1/4 cup ghee.
  • Soak 2 tsp whole jeeru,
  • 5 cardomon pods (cracked open),
  • 7 cloves,
  • 2 cinnamon, 1 inch sticks,
  • 12 black peppercorns.

Preparation

Step 1

Leave aside. soak 2 ½ cups rice in cold water for about ½ hour and leave aside.

Step 2

Braise onions and just before it turns gold add in the soaked spices with the water and close the lid of the pot, this gives it a lovely flavor.

Step 3

when onions are pinky gold add your chicken or meat pieces and 1 tblsp ginger paste and
1 tblsp garlic paste,
1 tsp salt, 2 tsp jeeru powder,
1/2 tsp turmeric.
Let it cook a bit then add 2 cups grated tomato with
3 tsp paprika and
hot chilli powder according to taste, and
2 tsp dhania powder.

Step 4

When the chicken/meat is cooked and the tomato and braise leave aside.

Step 5

Just half an hour before lunch time add water about
4 and half cups water and
2 and half cups rice add
2 and half tsps salt
When water boils add your soaked rice and
8 to 10 pieces of potatoes.

Step 6

Cook on high heat n stir the rice several times. When little water left simmer and cover lid till rice is cooked.

Step 7

Garnish with fresh chopped coriander/dhania Serve with sour milk, papar and atchaars... enjoy
