Hidden Valley Ranch Cold Veggie Pizza
Here is a great recipe I found using my fave product Hidden Valley Ranch salad dressing mix packets, and your leftover veggies. Why not make this healthy veggie pizza forlunch or dinner tonight? Here is my recipe!
Ingredients
- 2 cans {8-ounces each} reduced fat Pillsbury crescent dinner rolls
- 2 packages {8-ounces each} reduced fat cream cheese
- 1 cup light Miracle Whip
- 1 package Hidden Valley Ranch Salad Dressing Mix
- Assorted Veggies cut into bit size pieces {carrots, celery, broccoli, cauliflower, and red pepper}

Step 1
Heat oven to 375 degrees. Separate dough into 4 long rectangles. Place rectangles crosswise in ungreased 15 x 10 inch jelly roll pan. Press over bottom and 1 inch up sides to form crust. Seal perforations. Bake 10-12 minutes or until golden brown. Cool completely.
Step 2
Beat cream cheese, miracle whip, and salad dressing mix until creamy. Spread evenly over crust. Top with bite size pieces of raw vegetables {carrots, celery, broccoli, cauliflower, and red pepper}. Cut into appetizer size pieces. Refrigerate leftovers.

Ingredients
Makes 6
- 1/2 cauliflower head
- 8 eggs for cauliflower mix
- Pepper
- Salt
- 4-6 cups shredded cheese
- 6 slices salami
- 6 tbsp pizza Sauce
Method
- Boil diced cauliflower in salted water until tender.
- Blend, then transfer to mixing bowl.
- Mix in 2 eggs, pepper and 2 cups of shredded cheese
- Share the cauliflower mixture out between 6 ramekins, forming little cups
- Add 1 cup of shredded cheese
- Bake for 25 min at 375°F
- Add a slice of salami, a tbsp of pizza sauce, and one raw egg to each ramekin
- Top with cheese and return to oven for 7 min at 375°F
- Serve, and enjoy!
