Grandpa's Three Bean Salad

My Grandpa Boris loved making traditional three bean salad, this is still one of my classic favorite salads, here's the recipe..

Ingredients

  • 2 cans yellow wax beans
  • 2 cans cut green beans
  • 1 can dark red kidney beans, rinsed and drained
  • 1 cup chopped red onion
  • 2 tablespoons minced fresh parsley
  • 1/2 cup white wine vinegar
  • 1/3 cup sugar
  • 1/2 cup olive oil
  • Salt and pepper to taste

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
