Ingredients
- 3 large peppers (green, red, yellow,...)
- 1 & 1/2 large tomato
- 1 medium onion
- 3 cloves of garlic
- 50 g butter
- salt & pepper
- fresh herbs
Preparation
Step 1
Put butter in the pan, sautee chopped up onion and slowly add thinly sliced garlic.
Step 2
Cut up peppers. Add to the onion / garlic butter base in the pan. Cover and let simmer for 5 min.
Step 3
Slice up tomatoes. Add to the mixture. Season with pepper and salt. You should have enough water from peppers and onion in the pan. If not, add some water.
Step 4
Simmer and cook on low heat until vegetable super tender. About 30 min.
Step 5
Cool mixture a little bit and pour into blender / food processor. Mix until sauce becomes smooth. Pour back into pan. If it is too thick, you can add water or milk to the mixture. Bring to a boil and let stand.
Step 6
Serve with pasta.
Taste great with pasta but can be served as a side sauce to any poultry or fish.
Make lots ahead from summer vegetables. Freezes well.
