Fancy Atlantic Lobster Roll!

LOBSTER ROLLS.
The King of sandwiches. A god among bread-y creations. It reigns supreme above all others.
Ingredients
- about 2 cups of lobster claw meat, roughly chopped. You can also use bulk lobster meat (available at seafood stores).
- 1/4 cup fennel bulb, finely sliced
- 1/3 cup celery, finely diced
- a scant 1/4 cup of red onion, diced and then soaked in cold water for 10 minutes and drained. The soak takes out a lot of the 'bite' of the onion.
- 4-5 tbsp delicious mayonnaise
- 1 tbsp of Greek yogurt (optional) - I find it adds a freshness
- a generous pinch of fresh black pepper
- 2 pinches of celery salt
- 3 rather vigourous shakes of Tabasco
- zest of half a lemon and juice
- 2 7-inch pieces of baguette, aggressively buttered, and toasted

Preparation
Step 1
Combine your mayo, lemon juice and zest, Tabasco, Greek yogurt, pepper and celery salt and stir to combine.
Step 2
Stir in your fennel, celery, onion and lobster. If necessary add another dollop of mayonnaise until you've reached the consistency that your heart is singing for.
Step 3
Heartily pile onto your toasted bread. Eat.
Step 4
Praise Neptune, God of the Seas.
You can also slice the baguette into rounds, toast them, and top with a heaping tablespoon of lobster-mix to make a gourmet appetizer!
