Heavenly Pumpkin Slice

A rich filling of pumpkin, reminiscent of traditional pumpkin pie sits between a chewy, nutty cookie-like base and a thick layer of satisfying cream cheese icing. A family favourite!

Ingredients
- 1 and 1/2 cups all purpose flour
- 1 cup pecans, loosely chopped
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 teaspoon cinnamon
- 3/4 cup salted butter
- 1 can of pumpkin puree (15 ounces)
- 1 can of sweetened condensed milk (14 ounces)
- 2 eggs, beaten
- 1/2 teaspoon allspice
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 bricks cream cheese
- 1 teaspoon cinnamon
- 2 cups icing sugar
- 1 teaspoon vanilla extract
- 1/2 cup of milk
Preparation
Step 1
In a mixing bowl, mix the flour, pecans, sugars, 1 teaspoon of cinnamon and 3/4 cup of butter until crumbly. Pat into a 9X13 baking pan and set aside while you prepare the filling.
Step 2
In a mixing bowl, combine the pumpkin, sweetened condensed milk, eggs, allspice, salt, 1/2 teaspoon cinnamon and beat until smooth and combined. Pour on top of crust and bake at 350F for 25-30 minutes. Remove and cool.
Step 3
In another mixing bowl beat the cream cheese, cinnamon, icing sugar and milk until smooth. Pour over cooled pumpkin slice and refrigerate until ready to serve.
