Green Pea Pesto Crostini

Ingredients

  • 1 bag 8 oz frozen green peas thawed
  • 1 cup fresh basil leaves
  • 2 TBS extra-virgin olive oil
  • 12 slices French bread baguette toasted
  • 1/4 cup part skim ricotta cheese
  • 1/4 tsp. freshly ground black pepper

Preparation

Step 1

Combine green peas, basil and olive oil in bowl of food processor and pulse 8 to 10 times till mixture is smooth.

Step 2

Spread pea mixture evenly over toasted baguette slices.

Step 3

Top each slice with 1 teaspoon ricotta cheese and sprinkle evenly with black pepper.
