Ingredients
- 3/4 lb. ground beef
- 1 onion chopped
- 1 green pepper diced
- 1 TBS shortening
- 2 cans 8 oz tomato sauce
- 1 whole kernel corn 12 oz can
- 1/2 c. chopped ripe olives optional
- 1 pkg. Jiffy cornbread
- 1 garlic clove minced
- 1 TBS sugar
- 1 tsp salt and pepper
- 1 tsp chili powder
- 3 TBS chopped jalapenos
- 1 1/2 c. cubed Velveeta cheese
Preparation
Step 1
Cook onion and green pepper in shortening till tender. Add meat and brown. Add tomato sauce, corn, olives, garlic, sugar, salt, pepper and chili powder. Simmer 20-25 minutes.
Step 2
Add cheese stirring till melted and pour into 10x6 greased baking dish and set aside.
Step 3
Mix Jiffy cornbread and spoon over meat mixture in strips or dollops. Bake 375 for 40 minutes.
