Cheesy Baked Eggplant Casserole

Ingredients

  • 5 large tomatoes, rinsed, sliced
  • 2 md eggplant peeled 1" slices
  • 1 large Vidalia onion sliced
  • 1 Tbsp parsley
  • 1 Tbsp basil
  • 2 Tbsp garlic powder
  • 2 avocados peeled diced
  • 1 cup favorite cheese, diced

Preparation

Step 1

Preheat oven to 350* and olive oil spray your 15 x 9 baking dish.

Step 2

Slice your tomatoes over bottom of dish to let the juice of tomatoes coat bottom of pan along with the tomato slices.

Step 3

Now evenly spread out your eggplant slices, then top with onion slices. Next, sprinkle your seasonings evenly over dish. Then evenly spread your diced avocado.

Step 4

Loosely cover with foil, bake an hour. Remove from oven and top with your favorite cheese, bake 10 more minutes.

You can also use eggplant in place of the zucchini
