Tomato and Gorgonzola Tart

Ingredients

  • - 4 sheets of pastry dough
  • - A little olive oil
  • - 3 very fleshy tomatoes
  • - 1/3 cup gorgonzola
  • - 2 eggs
  • - 1/4 cup heavy cream
  • - Some chopped basil leaves

Preparation

Step 1

Preheat oven to 400 F
Brush the filo dough with oil, using a pastry brush, and place into a tart pan. Cut tomatoes into slices (lengthwise in long thin slices), and the gorgonzola (ditto: long thin slices). Place them on the dough. Beat the eggs, add cream and beat some more. Pour over the tomatoes. Sprinkle with chopped basil. Bake 30-35 minutes in a preheated oven.
