French onion soup recipes - 6 recipes

This is a fun food for me. I used to eat it all the time when I was young with my sister, at a cute French-style restaurant called La Madeleine's. We would eat the soup, then follow it by a double chocolate cookie. (Funny the food combinations we crave, eh?) Then I attempted to make it with my mom. We even went out of our way to find some quality gruyere cheese. Well, I was a bit too happy with the sugar while carmelizing the onions, and so the resulting soup was almost sickeningly sweet. I have a beautiful picture of it, though. Honeslty, the best french onion soup I've had is in France, so if you ever get a chance, go. On the other hand, why not just make it at home?

Ingredients

  • 1 whole duck breast
  • 1 sheet puff pastry
  • 3-4 slices ham
  • 3-4  tbsp raspberry jam
  • 3- 4 slices Muenster cheese

Method

  1. Fry the duck breast in a pan until medium rare (or your preference) and browned on the outside.
  2. Roll out a sheet of puff pastry, and layer the ham slices  in the middle.
  3. Spread the raspberry jam over the ham slices, and follow with the Muenster cheese, and the duck breast.
  4. Moisten the sides of the pastry with water, then fold to enclose the duck. 
  5. Brush the pastry with the egg yolk, then score lightly with a knife. 
  6. Bake for 10 minutes at 464°F (until the cheese is melted and the pastry is golden brown)
  7. Serve, and enjoy!

Boil potatoes and carrots in pot until soft

  • 2 Tbsp. Light Butter
  • 6 C. Reduced Sodium Beef Broth
