Ingredients
- 2 1/4 lbs of peppers (red, green and red)
- 2 large fresh tomatoes
- 1 small can peeled tomatoes
- 2 tablespoons olive oil
- 1 small head of garlic (4-5 cloves)
- balsamic vinegar (2-3 tablespoons)
- salt and pepper
Preparation
Step 1
Wash peppers and cut them in half. Cut into thin strips and peel.
Peel the small head of garlic. Finely chop the cloves, being careful to remove the germ at the center of the pod.
Step 2
Put olive oil in a pan to heat, add the pepper strips and sauté gently until they make their vegetable water (10 minutes). Then add the fresh tomatoes, the can of peeled tomatoes, and minced garlic. Cover and simmer slowly over low heat about 50 to 60 minutes. At the end of cooking, when the juice is almost evaporated, add the balsamic vinegar and sugar cubes. Season to taste with salt and pepper. Allow to simmer for 5 minutes. Remove from heat and let cool before eating.
