Ingredients

  • 2 bananas
  • 1 scant cup of coconut milk
  • 1 g of agar (organic section or Asian supermarket)
  • 1 pinch of powdered vanilla sugar
  • For the decoration: grated tonka bean

Preparation

Step 1

Cut bananas into chunks. Mix the finely with coconut milk, agar-agar and vanilla sugar

Step 2

Heat the mixture to activate the properties of agar and remove from heat. Pour mixture into ramekins. Reserve at least 2 hours in refrigerator before serving.

Step 3

Just before serving, sprinkle the foam with grated tonka bean.
