Ingredients
- 4 lbs endive
- 2 tsp veal
- salt
- pepper
- 1 cup water
- 1-2 tbsp olive oil

Preparation
Step 1
Cut the endive in half lengthwise and remove the heart.
Step 2
In a skillet, add the tablespoon of olive oil. Add endive, place flat side down.
Step 3
Sauté over medium heat, turning every 5 minutes.
Step 4
Once the endives are tender, add water and veal broth. Mix well.
Step 5
Add salt and pepper, and simmer 45 minutes by adding water from time to time. Do not let endive stick to skillet.

Method
- Boil the desired amount of small potatoes until tender.
- Spread on a lined baking tray, flatten slightly using a cup or jar. Don't over-flatten them!
- Sprinkle liberally with shredded cheese and Parmesan.
- Top with bacon slices approximately the same size as the potatoes.
- Drizzle liberally with balsamic vinegar.
- Place in oven, under the grill for 15 min at 375°F until the cheese is melted and the bacon is crispy.
