Ingredients
- 1 cup white whole wheat flour
- 1/2 cup all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 round teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup sugar
- 3/4 cup unsweetened applesauce
- 2 eggs, slightly beaten
- 1/2 teaspoon vanilla extract
- 2 cups peeled, diced apples (I used Arkansas Black)
Preparation
Step 1
1. Mix together the flours, baking soda, salt, cinnamon, nutmeg, and sugar. Add the applesauce, eggs, and vanilla extract and stir gently til combined. Grease a small baking loaf pan with cooking spray. Pour batter into the pan.
Step 2
2. Bake in a preheated oven at 350° for 60-70 minutes, or until toothpick inserted in center comes out clean. Cool for about 10 minutes in the pan before removing to a cooling rack.
**As a side note: make sure you use sweet apples, I think it ads alot to the flavor of the bread.**
