Preparation
Step 1
Add water, sugar, yeast, and butter in a large mixing bowl and stir to combine. Let sit for 5 minutes.
Step 2
Mix in the flour and salt until the dough is smooth. Transfer the dough to a clean work surface and knead it into a ball.
Step 3
Lightly oil a clean mixing bowl and the dough ball.
Step 4
Place the dough into the bowl and cover with a clean towel. Let the dough rise until it doubles in size -about one hour.
Step 5
When the dough has risen, bring water to a boil in a large skillet and add the baking soda.
Step 6
Meanwhile, preheat the oven to 425-degrees and spray a baking sheet with cooking spray.
Step 7
Remove the dough from the bowl and divide it into eight equal pieces.
Step 8
Roll each piece into a long rope. Using a dough cutter or sharp knife, cut off 1-inch pieces.
Step 9
Boil the pretzel bites for about 30-seconds, then remove with a slotted spoon to the prepared baking sheet so that none are touching. Do not leave in the water for too long, or the pretzel bites will taste bitter.
Step 10
Brush the tops with the egg wash and season with the salt.Bake for 15-18 minutes until golden brown. Let rest 5 minutes before eating.
