- 1 cup orange juice
- 1 tbs orange zest (about 2 oranges)
- 2 tbs soy sauce
- ginger to taste
- 3 cloves (1 1/2 tsp) garlic
- 1 tbs brown sugar
- 2 chicken breasts
- 2 tbs cornstarch

Preparation
Step 1
In a small bowl, combine OJ, zest, soy sauce, salt, garlic, and brown sugar. Mix well.
Step 2
Cut chicken into bite sized pieces and saute until cooked thoroughly. Add orange sauce and cook until sauce bubbles. Add cornstarch a little at a time until sauce is as thick as you'd like it to be.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
