Preparation
Step 1
In a bowl, combine 1 1/2 cup of flour, 1 cup of rolled oats, 1/3 of a cup of shredded pineapple, 1 tablespoon of virgin olive oil, 1 teaspoon of baking powder, 1 egg and gradually 1/2 a cup of water
Step 2
Pre-heat your oven to 350 degrees and spray a non-stick oil along the baking pan
Step 3
Mix your ingredients well and then spoon your thick batter into your baking pan. Keep at least 1-2 inches of space in between each mini muffin
Step 4
Bake for about 12-15 minutes
Step 5
Remove from oven and let cool for about 10 minutes
Step 6
Serve to your kids with paws!
