Ingredients
- Eggplant, Olive Oil
Preparation
Step 1
Cut the stem and all flesh from the eggplant
Step 2
Pre-heat your George Foreman grill
Step 3
Slice eggplant into 1/4 of an inch thick slices
Step 4
Brush olive oil onto both sides of the eggplant slices
Step 5
Grill for 15 minutes on one side, turn over and grill for another 10-15 minutes
Step 6
Let cool for 5-7 minutes and serve
