Ingredients
- 1 medium yellow onion, chopped roughly
- 2 lbs. ground lamb
- 10 clovesVampires Cure Garlic, or 7 cloves fresh garlic, finely minced
- 1 Tbsp. fresh rosemary, finely chopped
- 2 tsp. fresh thyme, finely chopped
- 1 tsp fresh oregano, finely chopped
- 1 tsp. sea salt
- 1/2 tsp. fresh ground black pepper
- 2 Tbsp. extra virgin olive oil
- Tzatziki Sauce
- Ingredients
- 1 english cucumber
- 1 pint whole fat plain greek yogurt
- 3 garlic cloves (finely grated or minced)
- juice of 1/2 lemon
- 1/2 tsp fresh oregano, finely chopped
- 2 Tbsp. extra virgin olive oil
- generous pinch sea salt
- black pepper to taste
Preparation
Step 1
Preheat oven to 400.
Process onion in a food processor until very, very fine.
Dump onto a clean tea towel and squeeze out the juice (into the sink obviously)
Return the onion to the food processor and add the remaining ingredients.
Process until the mixture is, well...a paste
Press meat mixture into a loaf pan, trying to avoid as many air pockets as possible.
Bake for 60-75 minutes.
Cool and refrigerate until cold. Slice into 1/8-1/4 inch slices and sear both sides in hot skillet.
Serve with soft flat bread, tzatziki sauce, shredded lettuce, onion (we like our onions caramelized) and tomatoes.

Tzatziki Sauce
Instructions
Grate cucumber into a clean tea towel. Squeeze out excess liquid.
Chop the cucumber very fine.
Stir everything together and refrigerate a few hours to allow flavors to meld.
