Meatalicious Lasagna
My mentor sent me a recipe to make for my college friends. After my first successful attempt, I gave it my own twist, and it was an even bigger hit. This a great dish I like to share with my loved ones.

Ingredients
- • 1 ½ pounds Ground Beef
- • 1 Pound Hot Italian Sausage
- • 3 Clove Garlic, minced
- • 28 oz Can Crushed Tomatoes
- • 2 Cans (6 oz) Tomato Paste
- • 4 tbsp Parsley, dried (divided evenly)
- • 2 tbsp Basil, dried
- • 2 tsp Salt, divided
- • 3 Cups Cottage Cheese
- • 3 Large Eggs, beaten
- • 1/2 Cup Parmesan Cheese, grated
- • 8 Cups Mozzarella Cheese, shredded
- • 1 Package (10 oz) Lasagna Noodles (add 1/2 tspn Salt and Olive Oil to Pasta Water)
- • Red Pepper Flakes (optional)

Preparation
Step 1
1) Preheat oven to 350 degrees F.
2) In a large stock pot, fill with water until halfway, and add olive oil and salt. Bring to a boil. Add noodles and cook for 10 minutes or until al dente.
3) In a large sauce pan over medium-high heat, brown ground beef, drain and place into sauce pan. Add sausage, garlic, tomatoes, tomato paste, 2 tablespoons parsley, basil and 1 teaspoon salt. Make sure sausage is completely cooked.
4) In a medium or large bowl (preferably glass or stainless steel), mix cottage cheese, eggs, parmesan cheese, remaining parsley and other teaspoon of salt. Mix well and set aside.
5) In a large 9 x 13 pan, arrange 4-5 cooked noodles on the bottom; overlapping just a little. Spread two spoonfuls of the cottage cheese mixture over the noodles; spreading evenly. Spread 1-2 spoonfuls of the meat mixture; spreading evenly. Top with 2 handfuls of cheese.
6) Repeat process until you end with sprinkling with handfuls of mozzarella cheese.
7) If making in advance freeze or refrigerate for up to two days. If eating immediately, bake for 20-30 minutes, or until the top is bubbly.
8) Remove from oven; sprinkle red pepper flakes if desired.
Bake longer, approximately 30 additional minutes, if removing from freezer
If refrigerated, bake an additional 15 minutes
If you do not want to boil noodles, you can buy parboiled noodles and place in the pan right from the box.
