These melt-in-your-mouth bars could not be easier to make. Simple on hand ingredients are combined to create a luscious bar cookie that’s quick to put together during the busy holidays but sure to impress your friends and family.

Ingredients

  • 1 1/2 cups butter
  • 3 3/4 cups all -purpose flour
  • 3/4 cup of sugar
  • 3/4 cup seedless raspberry jam (substitute your favorite jam)
  • Confectioner’s sugar to dust

Preparation

Step 1

Preheat oven to 350 degrees. Line a 16x11 inch (or similar) rimmed baking sheet with parchment paper.

Step 2

Melt the butter in a microwave safe bowl or measuring cup.

Step 3

In the bowl of an electric mixer using the paddle attachment, combine the flour, sugar and melted butter until a soft dough forms. Press half of the dough onto the parchment lined baking sheet in an even layer.

Step 4

Spread the jam over the dough. Take the remaining dough and crumble over the jam. Bake the bars in the preheated oven for 15-20 minutes or until the top is lightly browned and the jam is just starting to bubble. Allow the bars to completely cool then sift confectioner’s sugar over. Cut the bars into squares to serve.

When pressing the dough into the parchment lined baking sheet, I will often take a sheet of plastic wrap or press and seal and cover the dough then gently roll with a small rolling pin or my hands.
