4 Boys Mac'n'Cheese

This creamy old fashioned macaroni and cheese will take you back to grandma's house any time of year. It is a staple at Christmas, but I also make this year round for my 4 boys. Just today I was making this gooey mac'n'cheese when my boys ran in from the cold, I heard rounds of 'Hey, mom's making her mac!!' And 'All right mom!!' Gotta love that.

Ingredients

  • 1 (16 ounce) package macaroni
  • 8 tablespoons butter
  • 8 tablespoons flour
  • 2 cup milk
  • 1 16 ounce tub sour cream
  • 1 teaspoon salt
  • fresh cracked pepper, to taste ( I go pretty heavy with the pepper)
  • 4 cups shredded cheese (I use whatever I have on hand, today it was a half bag of Mexican Style shredded and for the remainder I shredded up a chunk of sharp cheddar) --The beauty of a good cream base sauce is you can be versatile with the cheese!
  • Top with:
  • 6 crackers for crumbs and a few tablespoons of shredded cheese

Preparation

Step 1

Boil macaroni according to package instructions and set aside. (Do this while making the sauce to save time.)

Step 2

Melt butter in dutch oven, or any good heavy pot. When butter is almost completely melted, begin whisking in the flour. Make sure flour is completely incorporated.

Step 3

Slowly whisk in the milk, sour cream, salt and pepper. Let this mixture cook at a very slow bubble for about 3 minutes.

Step 4

Gradually stir in shredded cheese. Allow to cook on med while stirring until cheese is completely melted.

Step 5

Add macaroni to sauce, mix well to ensure a good distribution.

Step 6

Crumble crackers over the top, then sprinkle with a few tablespoons of shredded cheese. Bake at 350 for 20 mins.

Step 7

Enjoy ooey gooey cheesey perfection!

You can easily turn this into a comforting casserole by adding a small bag of frozen sweet peas and 2 cans of tuna. Or you can add diced ham. Get creative with the cheeses and see what wonderful flavor combos you can make!
