Ingredients

  • 2 cups all purpose flour
  • 6 oz. raspberry-flavored jello
  • 1/4 cup sugar
  • 1/2 cup unsalted butter
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 eggs
  • 1/2 cup buttermilk or sour milk
  • 1/2 cup chocolate chips
  • 1/2 cup mixed berries(optional)

Preparation

Step 1

Preheat oven to 375 degrees. Spray, grease or line muffin pans. In a large bowl, cream together butter, sugar, jello and salt until light and fluffy. Beat in the eggs one at a time. In a separate bowl, mix together the flour and baking powder. Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated, over-mixing creates less airy muffins. Fold in chocolate chips and mixed berries. Spoon into muffin cups and bake for 30 minutes or until golden brown.
