Slow Cooker Smoky Black Bean Soup

This is pretty much a meal that cooks itself, aside from a little prep work. Its best made the day before, and reheated the next day
Ingredients
- 1 pound Smoked Turkey Bacon cut up or Smoked Ham, cubed
- 1 lb dried black beans, rinsed
- 5 cups water
- 1 small onion, chopped
- 1 garlic clove, chopped
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- Greek Yogurt
- Minced Green Onion

Soak the dried beans overnight in cold water with 1 to 2 inches over the top. Rinse the beans in cold water and drain. Place the beans in a five quart slow cooker. Cover the beans with all the ingredients (except yogurt & turkey bacon/ham) . Cook on low 10-12 hours. Stir and check occasionally to make sure the beans are not getting dry, add water if necessary. When the beans are soft it is done. Some like it pureed to a smooth soup (like me), some like it with some beans still in it. Next, cook the turkey bacon till crispy or you can use bacon or cut up ham. Add to soup and let it sit overnight for best results. Warm it up the next day and top with a dollop of Greek yogurt and sprinkle some minced green onions over the top. Mmmmm, so good! No need for a side with this. Its very filling!
