Daddys Favourite Banana Chocolate Chip Muffins

Daddys favourite, and for a good reason. These muffins are moist, yummy and packed full of banana chocolatey goodness. Made with love, as always.

Ingredients

  • 3 medium very ripe bananas
  • 2 egg
  • 1/3 cup Soy milk
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon turmeric
  • 1/2 cup dark chocolate chips
  • 2 tablespoons chopped walnuts (optional)

Preparation

Step 1

Preheat the oven to 350 degrees.

Step 2

Lightly coat the muffin tin with a little oil, coconut or vegetable works well.

Step 3

In a large bowl, mash your bananas until they are very, well..mashed!

Step 4

Whisk in egg, milk, granulated sugar, and brown sugar. The result should look very light and fluffy.

Step 5

In separate bowl, combine flour, baking soda, turmeric and salt.

Step 6

Add flour mixture to banana mixture and combine well.

Step 7

Fold in the chocolate chips and walnuts, and try not to eat them all.

Step 8

Spoon equal amounts of batter into muffin trays and pop into the oven.

Step 9

Let the delicious muffins bake for about 30 minutes, or until a toothpick comes out clean. Resist the urge to eat them whilst burning hot. They will taste much better cooled, I promise.

Step 10
