Almond Butter Finger Cookies

You may want to double this one. This is the number one asked for cookie at holiday time.
Ingredients
- 1 1/4 C softened REAL butter (do NOT use margarine)
- 2 tsp vanilla
- 1 tsp almond extract ( a must have)
- 4 C flour
- 2 C chopped pecans
- 1/2 tsp salt

Step 1
Mix all ingredients together. Take about a walnut size portion of mixture (will be flaky) and squeeze together in one hand between fingers and palm. You will be forming a cookie that is long like a log. Try to make it uniform in thickness. You will be able to see your finger folds leaving ridges on the cookie. Lay the formed finger cookie on cookie sheet. (no need to spray) Bake for 15-18 minutes. The tops should just start to brown when the cookie is done.
Step 2
Let cool for about 5 minutes then dredge in powdered sugar on all sides (gently). place on wax paper and let cool completely. Once cool, roll in powdered sugar a second time.
Makes approx 4 dozen cookies.
