Ingredients
- 2 Cups Penne pasta
- 1/4 Cup Red wine vinegar
- 1 Tbsp lemon juice
- 2 gloves of garlic,crushed
- 2 tea spoons of dried oregano
- Salt and Pepper to taste
- 2/3 Cups Extra olive oil
- 10 Cherry tomatoes cut halves
- 1 small Red onion sliced
- 1 small Green pepper chopped finely
- 1/2 Cucumber, slice thin
- 1/2 Cup sliced pitted black olives
- 1/2 Cup of crumbled Feta cheese
Preparation
Step 1
Boil Pasta - 11 min still a little firm
Drain and rinse with cold water
Let sit
Step 2
Whisk together
Add to Pasta Stir lightly
Chill in fridge for 3 hours before serving
