Ingredients
- 1 cauliflower head, cut into florets
- 1 tbsp tomato paste
- 1 tbsp garlic, minced
- 1 tsp ginger, minced
- 1 tsp salt
- 1 tbsp brown sugar
- 1/2 cup AP flour
- 1/3 cup glutenous rice flour
- SAUCE
- 2 cups bok choy, chopped
- 1 cup carrot sticks
- 1 tbsp garlic, minced
- 1 tsp ginger, minced
- 1/2 sweet onion, minced
- 3 tbsp cornstarch in 1/2 cup water
- 1/4 cup red wine vinegar
- 1/2 tbsp salt
- 1/2 tbsp soy sauce
- 1/2 cup tomato sauce
- 2 cups vegetable bullion
- 2 tbsp mango vanilla yogurt
- 1 tbsp brown sugar
Preparation
Step 1
Mix together flour, 1 tbsp tomato paste, 1 tbsp garlic, 1 tsp ginger, 1 tbsp brown sugar, 1 tsp salt, and enough water to make a thick paste.
Step 2
Dip cauliflower in the flour mixture. Fry until golden on all sides.
Step 3
Caramelize onion, garlic, and ginger. Add remaining vegetables, cook 5 minutes.
Step 4
Add sauce ingredients to onions. Simmer 10 minutes until vegetables are just cooked. Toss cauliflower in sauce until completely covered. Serve over rice.
