Ingredients
- 1 carrot, chopped
- 2 celery stalks, chopped
- 8 mushrooms, chopped
- 2 banana peppers, chopped
- 2 lg spicy peppers, chopped
- 3 tsp sesame oil
- 1 tbsp garlic, minced
- 1 tsp ginger, minced
- 1/2 tbsp curry powder
- 1/2 tbsp red curry paste
- 1/2 tbsp smoked paprika
- 1 tsp cumin
- 1 can coconut milk
- 1/3 cup tomato paste
- 1/3 cup brown sugar
- 1 tbsp soy sauce
Preparation
Step 1
Saute mushrooms, onions, garlic, and ginger until caramelized.
Step 2
Add remaining vegetables, cook 5 minutes.
Step 3
Add remaining ingredients, simmer 10 minutes or until vegetables are just cooked.
Step 4
Serve over rice or rice noodles.
