Ingredients
- 2/3 cup sugar
- 1 1/2 tbsp lemon juice
- 2 tbsp rum
- 2 tsp pumpkin pie spice
- 5 green apples, diced
- 2 tbsp vegan margarine
- Pie crust, raw
- 1 cup caramel sauce
- 1/4 cup flour
- 1/2 cup brown sugar
- 1/4 cup vegan margarine
- PIE CRUST
- 1 cup shortening
- 1/2 cup vegan margarine
- 2 tbsp soymilk
- 1 tbsp red wine vinegar
- 1 tbsp cornstarch in 1/2 cup hot water
- 4 cups flour
- 2 tsp salt
- 1 tbsp vanilla extract
- 1/2 cup brown sugar
- 1/2 cup white sugar
- CARAMEL SAUCE
- 1/2 cup vegan margarine
- 3 tbsp flour
- 1 cup brown sugar
- 1/2 cup white sugar
- 1/3 cup coconut milk
Preparation
Step 1
Combine pie ingredients. Grease cupcake pan. Press pie crust into pan.
Step 2
Mix first 6 ingredients in a pot. Simmer until apples are cooked.
Step 3
Combine Caramel ingredients, bring to boil, simmer 5 minutes.
Step 4
Pour apples into crusts. Combine flour, brown sugar, and margarine. Pour over apples.
Step 5
Make mini lattice over pies. Pour caramel sauce on top.
Step 6
Bake at 400*F for 10 minutes. Reduce heat to 350*F, bake 40-50 minutes and cover with tin foil. Remove foil for the last 30 minutes.
