Ingredients
- 1/3 cup lime juice
- 1 cup coconut milk
- 1/4 cup mango vanilla yogurt
- 1 tbsp tequila
- 1 tsp vanilla extract
- 1 cup sugar
- 1 1/3 cup flour
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp salt
- ICING
- 1/4 cup vegan margarine
- 1 tbsp coconut milk
- 1/4 cup lime juice
- 1 tbsp tequila
- 2 cups powdered sugar
Preparation
Step 1
Combine wet ingredients. Combine dry ingredients. Stir wet ingredients into dry ingredients until just combined.
Step 2
Preheat oven 350*F. Pour batter into greased cupcake pan. Bake 20-25 minutes.
Step 3
Combine icing ingredients. Spread icing on cooled cupcakes.
