Ingredients
- 4 - 5 medium to large size potatoes
- 1/2 small onion
- 1 can peas & carrots
- 2 - 3 tbs mayo
- 2 medium pickles
- pickle juice
- salt & pepper
Preparation
Step 1
Boil the potatoes. Be careful not to overcook them as they will turn mushy!
Cool them down in the fridge.
Step 2
Chop onion & pickles finely.
Add peas and carrots & mayo, salt & pepper.
Step 3
Peel potatoes and cut them into small cubes.
Mix with the rest of the salad. add pickle juice / salt & pepper to taste.
Step 4
cool in the fridge for 2 hrs before serving.
serve with schnitzles
good for breakfast or brunch too
