Ingredients
- 1 can refried beans
- 1 # pork sausage (unseasoned)
- 1 medium tomato, coarsely chopped
- 1 T chili powder
- 1 T vinegar
- 1 clove garlic, minced
- 1/2 t salt
- 1/4 t cinnamon
- 8 - 10" flour tortillas
- 1 c shredded Monterey Jack
Preparation
Step 1
Cook sausage, breaking into crumbles. Drain. Stir in tomato, chili powder, vinegar, garlic, salt, and cinnamon. Heat to boiling; then simmer uncovered about 10 minutes or until thickened.
Step 2
Meanwhile, soften tortillas in ungreased hot skillet about 30 seconds each side.
Step 3
Spread with refried beans, scoop meat mixture in center and sprinkle with cheese. Fold and place seam sown in baking dish. Bake uncovered 20 minutes at 350 degrees.
