Red Bean and Rice

Ingredients

  • 1 onion
  • 1/2 green bell pepper
  • 2 ribs celery
  • 3 cl. garlic
  • 3 15 oz can red beans
  • 1 can fire roasted tomatoes
  • 1 t thyme
  • 1 t oregano
  • 1 t smoked paprika
  • 1/2 t blk pepper
  • 1/4 t cayenne
  • 2 t hot sauce
  • 1 cup cooked brown rice

Preparation

Step 1

1. Saute onion, pepper, celery and garlic in 2 T water until soft. (6 min.)
2. drain beans and add half beans and half can tomatoes to food processor.
3. Combine all ingredients and cook over med low heat for 30 minutes.
