Parmesan Shrimp & Peppers

This recipe is excellent to take for lunch. I assemble it the night before and cook it in the microwave at work.

Ingredients
- 2 dozen shrimp, peeled, deveined
- ½ cup thinly sliced onions
- ½ cup each thinly sliced green & red peppers
- ½ cup sliced mushrooms
- 2 tablespoons thinly sliced butter
- ½ cup coarsely shredded Parmesan cheese
- 3 cups cooked rice, hot
Preparation
Step 1
Layer first six ingredients in order in a glass baking dish, cover with plastic wrap.
Step 2
Micro-cook the shrimp for 2-5 minutes until the shrimp are opaque
Step 3
Pour over the cooked rice
