Homemade Old Fashion Spaghetti

This was and still is a favorite when my grandmother made it and then my mom learned as I was a kid. it was fun to watch this made. Its a special treat to have home made spaghetti.

Ingredients
- 4 c semolina flour
- 4 eggs (optional)
- 2 Tbsp Virgin Olive oil
- pinch of salt
- 1/2 c warm water
- Rolling pin
Preparation
Step 1
Put flour on your clean counter top, make a well in the center of it and place in it olive oil and a bit of water. Mix by bring the flour from the edges to the center and knead it. Add water if it needs it as you continue to mix and knead until the dough forms into a smooth ball.
Step 2
Cover dough with a bowl and let it be for 10 minutes. Then knead the dough again. Cover for 15 minutes this time. Then divide the dough into 3 pieces and roll into 1/8 inch sheets. Then start cutting dough in strips with a sharp knife. The width is up to your liking. Or you can use a pasta machine. Dry for 1 hour before cooking in boiling water.
Step 3
Place in a pot of boiling water w/ a pinch of salt. For about 3-5 minutes or until slightly cooked not mushy. Drain and serve hot with your favorite sauce.
This is easy to do. You don't really need a pasta machine or a mix master to create pasta. This is the old fashion way of doing it. Fresh pasta cooks much faster than drying it.
