Garlic Shrimp Pasta

Ingredients

  • 8 oz uncooked angel hair pasta
  • 4 cups fresh baby spinach leaves
  • 1 1/2 cups halved cherry tomatoes
  • 3 tsp olive oil
  • 1/2 cup onion, finely chopped
  • 1 1/2 lb medium shrimp, no tail
  • 3 cloves garlic, finely chopped
  • 1/4 tsp crushed red pepper flakes
  • 1/2 cup chicken broth
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 3 tbsp parsley

Preparation

Step 1

Cook pasta as directed, Drain, return to pot, stir in spinach, tomatoes, and 2 tsp olive oil. Cover to keep warm. While pasta is cooking, in 12 inch nonstick skillet, heat remaining 1 tsp oil to medium high heat add onion, cook and stir 1 minute. Add shrimp, garlic, and pepper flakes. cook and stir 2 minutes.

Step 2

Stir in broth, salt and pepper, and cook 2 more minutes until shrimp are pink and firm. Remove from heat and stir in parsley. Add shrimp mixture to pasta mixture, toss to mix.
