Christmas Treat: Mini Cheesecake Tarts

Ingredients
- 12oz Vanilla Wafers
- 2 x 8oz packages Cream Cheese
- 3/4 cup White Sugar
- 2 Eggs
- 1 tsp Vanilla (use clear if you can find it)
- 1 can Fruit Pie Filling
- You Need: Miniature muffin tins (tassie pans) and miniature muffin pan liners.
Preparation
Step 1
Heat oven to 350F. Line miniature muffin tins with miniature liners.
Step 2
Crush the vanilla wafers well and place 1/2 tsp of wafers into each cup, pressing them down into the cup with your finger.
Step 3
Beat all remaining ingredients well and fill each cup almost to the top. Bake for 15 minutes.
Step 4
Put them on a cooling rack and cool completely. When ready to serve put a dollop of the pie filling on the top center of each tart. Store in the fridge, covered.
